Ingredients
- 3 medium white potatoes
- 2 tablespoons oil*
- 1 teaspoon ground paprika*
- 1 teaspoon dried Italian herbs*
- Pepper, to taste
- 8 skinless chicken drumsticks* (about 1 kg to 1.5 kg)
- 1 onion*
- 2 teaspoons minced garlic or 2 garlic cloves
- 2 carrots
- 1 head broccoli

Steps
1. Prepare oven and potatoes
- Preheat oven to 180°C.
- Line a baking tray or baking dish with baking paper.
- Chop potatoes into small bite-sized pieces.
- Place in a large bowl.
- Add 1 tablespoon oil, ½ teaspoon paprika, ½ teaspoon Italian herbs, and pepper.
- Mix well with a wooden spoon.
- Transfer to the lined baking tray or dish and roast for 40 to 50 minutes.
2. Prepare chicken and vegetables
- Remove skin from drumsticks: hold the large end, pull the skin down towards the small end, and remove it completely.
- Place skinless drumsticks in a large bowl.
- Roughly chop the onion and add to the bowl.
- If using fresh garlic, peel and chop cloves. Add to the bowl.
- Chop carrot into bite-sized pieces and add to the bowl.
- Cut broccoli florets from the stalk and slice into smaller pieces. Add to the bowl.
3. Season and roast chicken and vegetables
- Add 1 tablespoon oil, ½ teaspoon paprika, ½ teaspoon Italian herbs, and pepper.
- Mix well with a wooden spoon.
- Transfer to another lined baking tray or dish.
- Roast for 25 to 30 minutes, or until the chicken is cooked through (no longer pink inside).
4. Serve
Tips
- Use olive oil, canola oil, or vegetable oil.
- Replace dried Italian herbs with any dried herbs or spices you prefer.
- You can use chicken thighs or breasts instead of drumsticks.
- Use red or brown onion.
- Serve with hot or chilli sauce for extra flavour.
