Ingredients
- 500g short pasta*
- Canola oil spray
- 1 clove garlic, chopped
- 1/2 brown onion chopped
- 1 teaspoon of dried mixed herbs
- 2 chicken breasts, diced into 1 inch pieces
- 400g canned tomatoes
- Parmesan cheese, to serve (optional)
Steps
- Cook pasta in a large pot of boiling water for 10-12 min
until tender. Drain and reserve 1/4 cup of liquid. - Place a large non-stick pan on medium heat, lightly spray
with oil, add garlic, onion and mixed herbs, cook until lightly browned. Add chicken. Cook for 5 min then add canned tomatoes and simmer. - Add drained pasta and reserved liquid to the sauce mix,
toss to combine. - Serve with a sprinkle of Parmesan cheese.
*Tips
- Use wholemeal pasta for extra iron and fibre.
