Ingredients
- 5 medium potatoes, cooked and mashed
- 425g can of tuna or salmon (no added salt if available), drained and mashed
- 2 eggs, beaten
- 1 onion, chopped
- 1 cup dry breadcrumbs
- ⅓ cup frozen peas
- ⅓ cup canned corn (no added salt if available), drained
Steps
- Mix together the potato, fish, onion, peas, corn and egg.
- For each fish cake, roll about 2 tablespoons of the mix in breadcrumbs. Flatten slightly.
- Pour a small amount of oil into the frying pan. Using moderate heat, cook the fish cakes for about 5 minutes on each side.
- Serve with vegetables or a side salad.
*Tips
- For a flavour change, you could add 2 teaspoons of curry powder.
- Any leftover fish cakes can make a tasty sandwich filling.
