Ingredients
- 2 potatoes
- 190g can of red or pink salmon
- 2 tablespoons gherkins
- 1 egg
- 2 spring onions
- ½ cup breadcrumbs (wholemeal if available)
- ½ teaspoon pepper (optional)
- Olive oil spray
Steps
- Prepare the potatoes by removing the skin with a knife or peeler. Then chop into small bite size pieces.
- Bring a saucepan of water to the boil by increasing the heat. Add the potatoes and boil them for 10 to 12 minutes, or until they are very soft (they should break apart when pierced with a fork).
- Once cooked, drain the boiled potatoes in a colander or drain the water from the saucepan. If using a colander, return the potatoes to the saucepan with the heat turned off.
- Mash the potatoes using a fork or potato masher until smooth and fluffy.
- Drain the salmon and place in a small bowl, then mash using a fork.
- Crack egg into a small bowl and beat with a fork until egg white and yolk are mixed.
- Cut the roots off the spring onions. Cut the spring onions and gherkins into small pieces. Set aside on the chopping board.
- Add the mashed potato, salmon, gherkins, shallots, egg, breadcrumbs and pepper (if using pepper) in a bowl. Mix everything together using a spoon.
- Use a tablespoon or your hands to shape the mixture into 8 patties.
- Heat a non-stick fry pan over medium heat and spray with olive oil. Cook patties, in batches, for 4 minutes each side or until golden.
- Drain on paper towel and allow to cool.
