Ingredients
- 1 egg
- 1 cup self-raising flour* (wholemeal flour if available)
- 1 cup milk*
- ½ teaspoon ground cinnamon (optional)
- 2 tablespoons oil*
- 3 cups frozen berries*
- ¼ cup water
- 4 tablespoons plain yoghurt (optional)
Steps
- To make the batter, crack the egg into a large bowl and use a fork to mix the egg. Add the flour, milk and cinnamon. Mix everything together using a wooden spoon until the batter is smooth (a few small lumps are fine).
- Heat a large frying pan and add oil. Wait until the oil sizzles a little then add ¼ cup pancake batter to the pan, cooking 3 pancakes at a time (if there is enough room in the pan). Cook the pancakes for 3-4 minutes on one side and then using a turner or spatula, flip the pancakes and cook for a further 3 minutes. Transfer pancakes to a plate and repeat with remaining mixture.
- Meanwhile, add frozen berries to a small saucepan and add ¼ cup water. Cook, stirring regularly for 5 minutes, or until slightly softened.
- Serve pancakes with berries and a spoonful of yoghurt.
