Ingredients
- 3 medium sweet potato (or half a pumpkin)
- 1 onion or shallot
- 400g canned tomatoes* (no added salt if available)
- 400g canned butter beans* - no need to drain (no added salt if available)
- 1 teaspoon turmeric (optional)
- 2 cups chicken stock (no added salt if available)
Steps
- Dice the onion by removing the outer skins, cutting the onion into slices, then cutting slices into smaller pieces.
- Mash or puree the sweet potato.
- Drain the canned butter beans.
- Add onion, sweet potato, butter beans, tomatoes, turmeric (if using) and chicken stock to a large saucepan.
- Bring to the boil (about 10 minutes), turn the heat down and
cook gently for 10 minutes. - Serve in bowls.
*Tips
- Add extra vegetables that you have in your fridge or pantry like canned corn, peas or grated zucchini.
- You could also add in extra legumes like canned chickpeas or red kidney beans.
- Serve with 4 bread rolls or slices (wholemeal or wholegrain if available)
