Ingredients
- 1 tablespoon oil
- 1 medium onion, diced
- 2 cloves crushed garlic
- 1 medium carrot, diced
- 1 small red capsicum, diced
- 500g lean beef mince
- 400g can red kidney beans, drained
- 400g can crushed tomatoes
- 3 tablespoon tomato paste
- 1 teaspoon Mexican chilli powder
- 1 teaspoon smoked paprika
- 2 tablespoon balsamic vinegar
- 8 wholegrain tortillas or wraps
- 2 avocados, roughly mashed
- Juice of ½ lime or lemon
- 1/3 cup Greek yoghurt
- 4 sprigs coriander, chopped
Steps
- Heat oil in a large saucepan on medium heat. Cook onion until brown.
- Add mince to onion mixture and brown for 5 min, stirring to break up large pieces. Add mixed herbs and passata. Simmer at low heat for 10 min.
- Build your own tacos with mince, lettuce, tomatoes, carrots and cheese.
