Ingredients
- 6 medium potatoes, cooked and mashed
- 1 red capsicum*, chopped finely
- 400g can of butter beans (no added salt if available), drained and mashed
- 1 clove garlic, crushed
- 2 large eggs, beaten
- ½ cup of rolled oats (not quick oats)
- 1 tomato, sliced
- 1 carrot, grated
- 4 slices canned beetroot (no added salt if available)
- 4 lettuce leaves
Steps
- Boil water in a pot on the stove. Peel potatoes and place in the boiling water for 15 to 20 minutes. Once cooked, mash potatoes.
- Chop the capsicum finely into small pieces.
- Drain and then mash the butter beans.
- Beat 2 large eggs in a bowl and set aside.
- In a bowl, combine the potatoes, capsicum, butter beans, eggs, garlic and rolled oats. Stir until combined.
- Using clean hands shape about 2 tablespoons of mixture into a circle to make each burger pattie.
- Place onto a greased oven tray or use baking paper.
- Bake in a moderate oven* (about 180°C) for about 30 minutes. Cooking time will depend on the size of the burgers.
- Serve on a hamburger bun along with extra veggies like lettuce, fresh tomato and beetroot.
*Tips
- Burgers can also be cooked in a frying pan, electric frypan or on a barbeque.
- Red capscium could be replaced with 1 cup of cooked, mashed sweet potato.
- To make your own fresh breadcrumbs you will need a food processor and bread that is a few days old. Tear the bread into small pieces (about 6 to 8 pieces for each slice of bread) and pulse it about 10 times with 1-second pulses, or until the bread pieces turn into crumbs. You can use the crusts so this is a good way to use them up if no-one eats them in your house.
- You can store fresh breadcrumbs in an airtight container in the fridge for up to a week, or freeze them for up to 6 months. If using frozen bread crumbs, you can use them directly from frozen or thaw them in the fridge.
