First they take you into the wild, for remote dining at its finest, among the ruins of an early mining settlement at Joadja Old Town. There is of course a Wildfest twist, as you are handed a top hat and tails or long gloves and tiara upon entering their magical bushland setting - setting the tone for an evening of surprises. Out under the stars, guests will enjoy a seven course food adventure, curated by their wildly imaginative chef, Damien Monley of Grand Bistro at Bowral, from the natural bounty of the land. Damien has run the kitchen in Matt Moran's eponymous two hatted restaurant, London's internationally renowned The White Horse on Parsons Green, The Brooklyn Hotel and has been owner operator of two successful Sydney eateries, Madame Char Char at Surry Hills and Flat White Cafe. Woollahra. He is passionate about nature, the provenance of ingredients and produce he uses, his relationship with local suppliers and a belief in the joy of eating honest, rustic food.
