Cherry coulis

Nothing says summer like a bowl of lush cherries and you can add cherry cheer to ice-cream to take it to the next level.

Ingredients

  • 2 cups cherries, pitted and halved
  • ¼ cup (60ml) water
  • 3 tbsp sugar
  • 2 tsp lemon juice

Method

  1. Place all ingredients in saucepan on medium heat. 
  2. Bring to boil and allow to boil for 5 minutes or until cherries are soft. Allow mixture to cool a little then place mixture into food processor and blend to a puree.
  3. Serve warm over vanilla ice-cream.  

Serves

This recipe makes enough coulis to top around 4 serves of ice-cream.
