The art of chocolate: One day immersive workshop is a full day, hands on class led by chocolatier Wendy Alford at Tocumwal Chocolate School. A structured class designed for confident, repeatable results.
This workshop suits complete beginners through to experienced makers who want to refine technique, improve consistency and lift finishing standards. Students start with couverture fundamentals, learning what quality chocolate is, how to read working temperatures, and how temperature control and movement create shine, snap and clean release from moulds. Students temper chocolate, prepare and fill moulds, and mould bars and bonbon shells with a professional approach. Fillings include rich ganache and a buttery caramel style centre, with guidance on texture, balance and piping for reliable results.
The afternoon focuses on assembly and finish, including capping, sealing, demoulding and presentation. Students learn practical troubleshooting, plus storage and handling tips to protect gloss and structure after the class.
A seasonal lunch is served on the deck as part of the day, offering a relaxed pause between sessions. Students leave with a beautifully packaged selection of handcrafted chocolates made during the workshop, plus a recipe and technique booklet to support continued chocolate making at home. All tools, ingredients, packaging and aprons are supplied.
