Spring Hill roast beef

A good Sunday roast can be one of the hardest challenges, so here’s how to pull it off to perfection.

Roast beef on platter with veggies


  • 1.5kg beef rolled roast
  • 6 washed potatoes
  • 1 sweet potato
  • 2 brown onions
  • 1 bunch Dutch carrots
  • 1 bunch beetroot 
  • Feta cheese
  • Fresh rosemary 
  • Salt and pepper


  1. Preheat over to 180°C (350°F). Season beef with salt and pepper and cook for 1.5 hours.
  2. Take tops off carrots and beetroot then cut potatoes, onion and beetroot in quarters. Lightly spray vegetables with olive oil and season with salt, pepper and rosemary.
  3. Bake vegetables for 1 hour in oven with beef. Once cooked, let beef rest for 15 minutes then slice, top vegetables with crumbled feta and serve.
